Book Description :

The A-to-Z guide to essential vitamins, minerals, and nutrients, so you can ditch synthetic supplements and promote health naturally with nourishing foods. Vitamins and minerals are the building blocks of good health. But the heavily processed foods that are so common in today’s modern diet are stripped of these nutrients, leaving many people nutrient deficient despite meeting (or exceeding) their daily calorie needs. The accepted solution is to take supplements created in a lab, but the dosage and interactions can be confusing, and supplements are loosely regulated and not always foolproof, especially since our bodies are designed to receive nutrients from natural, whole foods. Eat Your Vitamins features fifty key vitamins, minerals, and other nutrients essential to your health. You will find clear definitions of each nutrient along with the role it plays in the body, how it is best consumed and absorbed, recommended daily doses, and detailed lists of foods and natural sources that contain the vitamin along with a recipe for a nutrient-rich meal. Ditch the synthetic supplements and make the right choice about how to properly feed and fuel your body.

Book Description :

The vitamins are a chemically disparate group of compounds whose only common feature is that they are dietary essentials that are required in small amounts for the normal functioning of the body and maintenance of metabolic integrity. Metabolically they have diverse function, as coenzymes, hormones, antioxidants, mediators of cell signaling and regulators of cell and tissue growth and differentiation. This book explores the known biochemical functions of the vitamins, the extent to which we can explain the effects of deficiency or excess and the scientific basis for reference intakes for the prevention of deficiency and promotion of optimum health and well-being. It also highlights areas where our knowledge is lacking and further research is required. It provides a compact and authoritative reference volume of value to students and specialists alike in the field of nutritional biochemistry, and indeed all who are concerned with vitamin nutrition, deficiency and metabolism.

Cross-cutting, health-related themes present insights into the use of vitamins not just for general nutritional balance, but with emphasis on their roles in the prevention and/or treatment of specific health issues such as inflammatory diseases, overweight and immune function. Information is presented to address the roles of vitamins in gene expression and epigenetics, providing important information in the further development of personalized medical treatments and establishing appropriate dietary programs based on individual genetic profiles. Those working in nutrigenomic and pharmaceutical developments will use the information to identify potential benefits of vitamins alone or in combination."--Page 4 of cover.

Book Description :

During the last 10-12 years, the research on homocysteine has become very active. About 1500 of articles are now published each year on homocysteine and the vitamins involved in its metabolism. A disturbed homocysteine metabolism can be an underlying factor for pregnancy complications and fetal malformations, cardiovascular disease, dementia, psychiatric and neurologic disorders and possibly carcinogenesis. A disturbed homocysteine metabolism can in most cases be normalised by treatment with folate and/or vitamines B12 and B6. Many of these findings therefore directly concern most practitioners. However, if there are good reviews covering single aspects of this research, these are published in specialised journals. The author has realised the difficulties for the practitioner in keeping updated. This second edition has been thoroughly updated and also offers more data on the vitamins. Over 1600 references are made available.

Book Description :

This single-source reference draws together the current knowledgeof the vitamins' biological properties in the context of humannutrition. Vitamins are co-enzymes, antioxidants or precursors ofhormones and are therefore involved in a great many biochemical andphysiological processes. They play a vital role in the maintenanceof health, and there is evidence that dietary sources of vitaminshave beneficial effects in the prevention of heart-relateddiseases, bone diseases and possibly cancer. Following introductory chapters on historical and nutritionalaspects of vitamins, the next four chapters cover relevant anddetailed aspects of physiology and functional anatomy, biochemistry, immunology and the regulation of protein synthesis bynuclear hormone receptors. These background chapters, supported bya glossary of terms, provide the scientific principles upon whichvitamin functions are based. The following thirteen chapters dealwith each vitamin in turn. Subject areas include chemicalstructure, intestinal absorption, transport, metabolism, biochemical and physiological actions, immunoregulatory properties,deficiency-related diseases and potential toxicity. An extensivebibliography refers the reader to the original researchliterature. Vitamins is aimed at nutritionists, biochemists, physiologists andphysicians whether they be researchers, teachers or students. Foodscientists, food technologists and many others working in thehealth professions will also find much of use and interest in thebook. The inclusion of the theoretical principles in the backgroundchapters makes the book an ideal starting point for those workingoutside the area who need a solid overview of the subject.

Book Description :

This volume is the newest release in the authoritative series issued by the National Academy of Sciences on dietary reference intakes (DRIs). This series provides recommended intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for individuals based on age and gender. In addition, a new reference intake, the Tolerable Upper Intake Level (UL), has also been established to assist an individual in knowing how much is "too much" of a nutrient. Based on the Institute of Medicine's review of the scientific literature regarding dietary micronutrients, recommendations have been formulated regarding vitamins A and K, iron, iodine, chromium, copper, manganese, molybdenum, zinc, and other potentially beneficial trace elements such as boron to determine the roles, if any, they play in health. The book also: Reviews selected components of food that may influence the bioavailability of these compounds. Develops estimates of dietary intake of these compounds that are compatible with good nutrition throughout the life span and that may decrease risk of chronic disease where data indicate they play a role. Determines Tolerable Upper Intake levels for each nutrient reviewed where adequate scientific data are available in specific population subgroups. Identifies research needed to improve knowledge of the role of these micronutrients in human health. This book will be important to professionals in nutrition research and education.

Book Description :

The first demonstration of the existence of a vitamin and the full recognition of this fact are often attributed to the work of McCollum, who found that a sub stance in butterfat and cod-liver oil was necessary for growth and health of ani mals fed purified diets. It became obvious that an organic substance present in microconcentrations was vital to growth and reproduction of animals. Following the coining of the word vitamine by Funk, McCollum named this fat-soluble sub stance vitamin A. We can, therefore, state that vitamin A was certainly one of the first known vitamins, yet its function and the function of the other fat-soluble vitamins had remained largely unknown until recent years. However, there has been an explosion of investigation and new information in this field, which had remained quiescent for at least two or three decades. It is now obvious that the fat-soluble vitamins function quite differently from their water-soluble counter parts. We have learned that vitamin D functions by virtue of its being converted in the kidney to a hormone that functions to regulate calcium and phosphorus metabolism. This new endocrine system is in the process of being elucidated in detail, and in addition, the medical use of these hormonal forms of vitamin D in the treatment of a variety of metabolic bone diseases has excited the medical com munity.
