Book Description :

The stability and bioavailability of food ingredients and foods fortified with functional ingredients has long been an issue. In this thesis, nanoemulsion-based delivery systems were used to improve health-promoting effects and stability of food ingredients. First, nanoemulsions, including solid lipid nanoemulsions, stabilized by Tween 20 and glycerol monooleate, lecithin, or modified starch were developed. The average particle size of nanoemulsions with sufficient emulsifiers (Tween 20 and glycerol monooleate) and energy input can reach 60.5 nm. The nanoemulsion system has been further proved to improve bioavailability of dibenzoylmethane by 2.95-fold, compared to that of conventional emulsions. Curcumin, a polyphenol compound extracted from turmeric powders, possesses a variety of health-promoting effects but has extremely low bioavailability, mainly due to limited solubility. A dry curcumin emulsion system was developed combining solvent displacement, emulsification, and freeze-drying technology. Two ug/ml of encapsulated curcumin decreased viability of HepG2 cells to 52% (100% by DMSO-dissolved curcumin); 13.69 mg/ml of encapsulated curcumin inhibited 71% of TPA-induced inflammation of mice ears (none by DMSO-dissolved curcumin). HPLC showed that the encapsulated curcumin was stable for at least two months. FTIR and DSC studies suggested that lower crystallinity of encapsulated curcumin contributed to the enhanced activities of encapsulated curcumin. Stability is another issue to be addressed. Citral, derived from citrus fruits, is one of the most important flavor ingredients in the food industry, but it is very susceptible to oxidation and off-flavor generation at acidic environment, in which citral is most often used. The modified-starch-based solid lipid nanoemulsion system was used to stabilize citral. For comparison, two emulsions stabilized either by Tween 20/glycerol monooleate or modified starch were also used to encapsulate citral. The results showed that the citral stability was best retained if encapsulated in solid lipid nanoemulsions, and the off-flavor generation was best inhibited by using thick emulsifiers such as modified starch. In the thesis, it was proved that the nanoemulsion and its variations improve the health-promoting effects of insoluble nutraceuticals and the stability of delicate food ingredients.

Book Description :

While nutraceuticals were verified to be expedient, they often lack stability, bioavailability, and permeability, and nano-nutraceuticals are being developed to afford a solution to the problem. Nanotechnology in Nutraceuticals: Production to Consumption delves into the promises and prospects of the application of nanotechnology to nutraceuticals, addressing concepts, techniques, and production methods. Nutraceuticals retain less stability, efficacy, and bioavailability when entering the human body. To overcome such problems, nanotechnology shows promise when applied as a tool to improve the quality and stability of nutraceuticals. This book discusses metallic nanoparticles and their applications in the food industry with specific application to nutraceuticals. It includes detailed discussion on potential functional properties of nutraceuticals with regard to antimicrobial activity, anti-inflammatory activity, and anti-cancer activity. Since nanoparticles can be toxic past a certain limit, implementing nanotechnology under thoughtful regulations is considered critical. The book addresses these issues with chapters covering the principles for the oversight of nanotechnologies and nanomaterials in nutraceuticals, the implications of regulatory requirements, the ethics and economics of nano-nutraceuticals, and consumer acceptance of nanotechnology based foods.

Book Description :

This book provides a source of much needed and up-to-date information on the products and applications of nanotechnology for the food sector - for scientists, regulators, and consumers alike. It also gives an independent, balanced, and impartial view of the potential benefits as well as risks that nanotechnology applications may bring to the food sector. Whilst providing an overview of the state-of-the-art and foreseeable applications to highlight opportunities for innovation, the book also discusses areas of uncertainty in relation to public perception of the new technological developments, and potential implications for consumer safety and current regulatory controls. The book also discusses the likely public perceptions of nanotechnologies in the light of past technological developments in the food sector, and how the new technology will possibly be regulated under the existing regulatory frameworks.Recent developments in the field of nanotechnology have paved the way for lots of innovation in a number of industrial and consumer sectors, including food and food packaging. Whilst nanofood sector is a relatively new emergent, it is widely expected to grow rapidly in the future. A number of nano-sized additives and supplements for food and healthfood products, and nanotechnology derived food packaging materials, are already available in some countries, and their number is expected to increase in the coming years. Whilst such developments offer enormous benefits to the food sector, they have also raised a number of issues in relation to consumer safety, environmental impacts, and ethical, policy and regulatory aspects.Despite these rapid developments in nanotechnology applications for the food sector, prior to this book only a few reports and articles were available that provide an account of the new developments and the current size of market for nanotechnology products and applications. These do not provide a critical evaluation of the broader aspects of the technology, such as issues around safety of the products to consumers and the environment, and adequacy of the existing regulatory controls.
