Book Description :

Potato (Solanum tuberosum L.) is grown in over 100 countries throughout the world. As a staple food, potato is the fourth most important crop after rice, wheat, and maize, and has historically contributed to food and nutrition security in the world. Global interest in potato increased recently as world food prices soared, threatening the global food security and stability. Unlike major cereals, potato is not a globally traded commodity, and prices are usually determined by local production costs. Thus, potato is increasingly regarded as a vital food-security crop and as a substitute for costly cereal imports. With such importance, the 29 chapters in the edited book address the issues of sustainable potato production. This book begins with an introduction on sustainable potato production and global food security, and then presents eight case studies selected globally and covering different issues relevant to sustainable potato production in both developed and developing countries.

Book Description :

This book is open access under a CC BY 4.0 license. This book provides a fresh, updated and science-based perspective on the current status and prospects of the diverse array of topics related to the potato, and was written by distinguished scientists with hands-on global experience in research aspects related to potato. The potato is the third most important global food crop in terms of consumption. Being the only vegetatively propagated species among the world’s main five staple crops creates both issues and opportunities for the potato: on the one hand, this constrains the speed of its geographic expansion and its options for international commercialization and distribution when compared with commodity crops such as maize, wheat or rice. On the other, it provides an effective insulation against speculation and unforeseen spikes in commodity prices, since the potato does not represent a good traded on global markets. These two factors highlight the underappreciated and underrated role of the potato as a dependable nutrition security crop, one that can mitigate turmoil in world food supply and demand and political instability in some developing countries. Increasingly, the global role of the potato has expanded from a profitable crop in developing countries to a crop providing income and nutrition security in developing ones. This book will appeal to academics and students of crop sciences, but also policy makers and other stakeholders involved in the potato and its contribution to humankind’s food security.

Book Description :

Originated from the Andeans and characterized by its high nutritional value and wide adaptability, the potato is one of the most globally important crops today. It is now being planted in about 160 countries, with China as the biggest potato producer in the world, accounting for one-fourth of the world's total production. The production and consumption of potatoes in China will influence the potato industry worldwide. This book covers the origin, distribution, production, and consumption of the potato.Potatoes have been planted throughout China since their introduction 400 years ago. They have become the main staple food for many Chinese people, especially in the remote mountainous regions. Through the years, different regions have developed different cooking methods for this highly versatile vegetable. With increasing concerns over the ills of Western processed food, for example, French fries, potato dishes prepared in the Chinese way have the advantage of being healthy and diverse. This book serves to provide detailed instructions for their many methods of preparation. With 2008 declared as the United Nations International Year of the Potato, the release of this book is timely, as it encourages healthy and more varied consumption of the crop, thus advancing the potato industry forward.

Book Description :

Recent advances in gene technology, plant transformation, and the growing knowledge of DNA sequences of plants as well as of their most important parasites and symbionts offer many interesting prospects for the breeding of new crop varieties. This was not only recognized by the major seed companies, but also by the governments of developing countries and by worldwide foundations supporting their agriculture. The know-how gained by the seed companies on crops important for the agricultural industry in developed countries could easily be provided for free to the international and national organizations dedicated to development of crops important in the third world. Results obtained worldwide become easily available to everybody through the scientific literature. Likewise, agricultural research in, e.g., the USA or Europe profits from the natural plant gene pool available in the third world. All this definitely provides for the possibility of fast change, new prosperity and security of food supply in the whole world, if properly applied. The fast development also asks for ethical and sociopolitical considerations, whereby not doing the right can be as much a mistake as doing the wrong.
