Abstract: Açaí berry is the fruit of an Amazonian palm tree and rich in anthocyanins (ACNs). Scientific studies have proven the health benefits of açaí berry and declared this fruit as "super fruit". ACNs have high antioxidant activities, but they are unstable and can easily deteriorate during food processing. In order to protect ACNs and increase their applicability, food-grade water-in-oil (W/O) emulsions were successfully formulated with different concentrations of açaí berry extracts (AEs). The formulated W/O nanoemulsions were relatively stable, with no phase separation after 30days of storage. The average droplet size varied between 146.8 and 814.8nm, with higher values corresponding to samples without AEs. All W/O nanoemulsion samples exhibited antioxidant activity and high retention rates of polyphenols after 30days of storage. ACN retention followed first-order kinetics, with high protection of ACNs observed in emulsified samples. 2% AE encapsulated in a 30wt% W/O nanoemulsion had an estimated half-life of 385days. The results indicate that stable nanoemulsion systems with high ACN protection can be produced with possible applications in the food and pharmaceutical industries. Nanoemulsions (NEs) are attractive to be employed in various applications. Preparation of NEs using whey protein isolate (WPI) renders benefits due to avoidance of chemical utilization. In this study, the NEs stabilized by WPI was prepared using ultrasonic emulsification. The plant seed oil from Echium plantagineum which was rich in omega-3 fatty acid was used. The parameters in the ultrasonication were optimized for generating NEs. In addition, they were investigated on cytotoxic test and anti-inflammatory activities on THP-1 cell line. The WPI-stabilized NEs were obtained at the optimum concentration of 5% (wt.) E. plantagineum seed oil and 20% (wt.) WPI using high intensity ultrasonicator. The optimized conditions were 20% amplitude, 1750 Joules of energy and the temperature at 45oC. The average size of the obtained WPI-stabilized NEs (5% oil) was 225.83 ± 1.52 nm, polydispersity index (PdI) was 0.24 ± 0.01 and zeta potentials was -31.50 ± 0.20 mV.

Buriti ( Mauritia flexuosa L.) oil is one of the richest vegetal sources of carotenoids, and its use in food industry is interesting considering the growing interest of the consumers for healthier products. Nanoemulsions of buriti oil were produced by phase inversion temperature (PIT) method for subsequent incorporation in isotonic beverage. The incorporation of nanoemulsions of buriti oil in beverages aims to replace artificial colouring by natural dyes. The nanoemulsion stability was evaluated by measuring average droplet size (73–86 nm), polydispersity (0.08–0.15), lipid oxidation quantification (0.05–0.1 mmol MDA kg −1 ), and total carotenoids. The beverages were evaluated in terms of pH (2.72–3.05), osmolality, total titratable acidity (0.164–0.177 g citric acid L −1 ), soluble solids (4.23–5.13 °Brix), and colorimetric parameters. Microbiology and sensory evaluation were also carried out, and the results indicated that buriti oil nanoemulsions can be incorporated in isotonic beverages. The objective of this research work was to formulate and develop an intranasal oil-in-water nanoemulsion (NE) using spontaneous emulsification method. Based on ternary phase diagram, emulsification time, and drug solubility study, the composition ratio of surfactant:co-surfactant:oil was optimized to 2:1:1. The model antiepileptic drug chosen for loading was phenytoin. The NE preparation was evaluated for particle size, zeta potential, electrical conductivity, pH, % transmittance, polarized light microscopy, in vitro drug release studies using HPLC, sterility validation, differential scanning calorimetry (DSC), and in vitro nasal toxicity testing in bovine nasal mucosa. The nanoemulsion formulations were then subjected to stability studies for six months by storing formulations at 25±5°C and 5±3°C. The NE exhibited a clear and stable formulation with globule size less than 20 nm and neutral zeta potential. The absence of birefringence and high conductivity values indicated that the formulations were o/w NE. The pH measurements confirmed compatibility of such formulation for intranasal delivery. In vitro release study showed 100% release of the drug from NE over a period of 48 hours. The absence of any endothermic events in the phenytoin - self nanoemulsifying mixture (SNE) when analyzed in DSC conclusively indicated that phenytoin was completely solubilized in this mixture.The histopathological studies of optimized formulation did not show signs of damage on the nasal mucosa.The results of the sterility verification test demonstrated that the sterilization of the final formulation using aseptic filtration with 0.22μm filter was sufficient for rendering the formulation aseptic. The nanoemulsion was found to be stable in all the temperature conditions when particle size distribution, drug content, pH, and conductivity were taken as stability indicating parameters during the six-month study period. Based on the obtained results, the o/w phenytoin NE was found to be stable and desirable for use in intra-nasal delivery.
