The goal is to create a blockchain model that can beimplemented across food supply chains and present the benefits and limitations in itsimplementation. Food provenance is one of the most challenging problems that FSC companies facetoday. A global supply chain network with multiple operating procedures and asymmetrical foodregulations between countries makes end-to-end food tracking incidental to the food industry. Adetailed literature review on the current challenges in food tracking, food safety regulations and foodsupply chain design is also discussed in this research. Analysis of food illness outbreak dataset in theUS between 2007-2016 is also presented to focus on two key results. Firstly, to focus the blockchainmodel development on food products with highest food illness outbreak incidents and secondly, toincrease IoT scanning points in certain stages of the supply chain that have recorded more than 50%of the total contamination incidents. Finally, a blockchain model is created using HyperledgerSawtooth, and its benefits over conventional information technology systems and global foodtracking methods are presented. Future research studies can focus on using blockchain enabledmodels to replace ERP systems, reduce food waste and improve supply management between stagesin the food supply chain.

While blockchain technology (BT) has gained a great deal of publicity for its use in cryptocurrencies, another area of BT application has emerged away from the public eye, namely supply chains. Due to the increasing fragmentation and globalisation of supply chains in recent years, many products have to pass through countless production steps worldwide (from raw material extraction to the point of sale). Ensuring the quality and sustainability of production in preceding steps is a major challenge for many firms and thus, ultimately, also for the consumer. BT offers potential for achieving significant progress on this front. Put simply, the blockchain makes it possible to verify data decentralised within a network, store it in a tamper-proof and traceable format and make it accessible to all members of a network. The potential benefits of BT lie firstly with the consumer, who is able to trace the origin of products, which makes sustainable purchases easier. Secondly, BT enables producers to automate parts of their supply chains and to verify cost effectively the quality and origin of their products. Thirdly, there are hopes that BT could make supply chains more inclusive for small and medium-sized suppliers, especially in developing countries. BT also offers a means of more easily creating confidence in intermediate goods supplied, thereby dismantling barriers to entry. Taken together, BT could thus help to make consumption and production more environmentally friendly, socially equitable and inclusive, and thereby foster sustainable development. So far, pilot projects have received investment primarily from very large companies. Both the firms and their consumers can now audit a number of products in real time for manufacturing method and origin. While BT can securely store and chain together the inputted data, it cannot yet guarantee the accuracy of that data. This remaining challenge regarding the digital-analogue link could be addressed through links with other technologies, such as the Internet of Things (IoT). However, independent analogue audits are still the only means in most cases of checking compliance with labour, environmental, animal-welfare and other relevant standards. Consequently, the use of BT offers substantial potential benefits for sectors in which the digital-analogue link can be effectively bridged, such as the food and high-quality commodities sectors. Small-scale suppliers in developing countries also frequently lack the digital education, equipment and infrastructure needed in order to deploy BT. This is where national and international development policy is needed to leverage the benefits of BT solutions for inclusive production. General technological standards can also help to counteract the monopolisation of technological developments by multinational concerns. In this way, policy-makers could help to harmonise the interests of consumers and producers with those of small and medium-sized enterprises (SMEs) in the supply chain.

Traceability is becoming a requirement and a fundamental differentiator in many supply chain industries, including the coffee supply chain. More than ever, consumers are increasingly concerned about production practices relating to human rights, food safety, and environmental sustainability. Consumer expectations of product origins are expected to further increase, especially for products that are consumed every day. In the same time, companies ask for more information about the provenance of the products they sell. However, many supply chains are presently obscured, due to their complex and global nature. In the same time, Blockchain technology, a potential disruptive technology that is early in its evolution, is showing promise for solving some global supply chain management problems. For now, research has primarily focused on the application of the technology in the financial services industry. In order to address the current lack of research as well as the promising business opportunities, this thesis at hand, looks at how Blockchain can overcome challenges of the supply chain of coffee, such as limited traceability of the coffee bean back to the farm. This thesis reviews two existing bodies of literature; the first, the supply chain of coffee and its current challenges, the second the Blockchain technology and its characteristics and limitations. Following this review, the author defines the implications of the Blockchain technology for the supply chain of coffee. From here, the author develops a model by which to view a Blockchain integration and its value in a particular use-case. Finally, through the application of the model to a single-case study, the author proposes to integrate Blockchain in a digital traceability system, in which Blockchain forms the backbone for generating trust in the system. The results suggest that a combination of Blockchain with other technologies increases the traceability and trust along th.
