“A beautiful read, a vital illustration of Southern foodways, and an important addition to the canon of great American cookbooks.”—Matt Lee and Ted Lee, authors of The Lee Bros. Charleston Kitchen Hundreds of thousands of people have made a trip to dine on the exceptional food cooked by Dora Charles at Savannah’s most famous restaurant. Now, the woman who was barraged by editors and agents to tell her story invites us into her home to taste the food she loves best. These are the intensely satisfying dishes at the heart of Dora’s beloved Savannah: Shrimp and Rice; Simple Smoky Okra; Buttermilk Cornbread from her grandmother; and of course, a truly incomparable Fried Chicken. Each dish has a “secret ingredient” for a burst of flavor: mayonnaise in the biscuits; Savannah Seasoning in her Gone to Glory Potato Salad; sugar-glazed bacon in her deviled eggs. All the cornerstones of the Southern table are here, from Out-of-This-World Smothered Catfish to desserts like a jaw-dropping Very Red Velvet Cake. With moving dignity, Dora describes her motherless upbringing in Savannah, the hard life of her family, whose memories stretched back to slave times, learning to cook at age six, and the years she worked at the restaurant. “Talking About” boxes impart Dora’s cooking wisdom, and evocative photos of Savannah and the Low Country set the scene. “Dora Charles’s take on classic Southern recipes is approachable and creative, and her moment in the spotlight is long overdue.”—Eater “Even just reading the names of recipes in Savannah chef Dora Charles’ debut cookbook is making us wild with hunger—Buttermilk cornbread? Fried chicken? Very red velvet cake? We’re not sure we can wait . . .”—People

Book Description :

Global Gastronomic Adventures Presents A Real Taste of Southern Cooking ( Southern cooking Recipe Cookbook) When I started this project - Global Gastronomic Adventures - I didn't think it will get me this far, I didn't think it will become a way of getting to know cultures through food. My goal at first was to discover new and interesting recipes and the story behind them, but I realized that food speaks a lot about nations, about cultures and about individuals themselves and it is the perfect way to learn about countries in the deepest possible way. Food speaks a lot about history, speaks a lot about the struggles people have been through in some cases and speaks a lot about their joy if we look at festive dishes. Global Gastronomic Adventure is truly a way of getting to know the world and its meanings and I invite you to join me in this adventure, focusing on United States in this book. United States' cuisine has many influences and is different from region to region, but we will focus on the Southern cooking because I find it to be one of the most interesting. Southern cooking is a mix of the Native American cuisine and African American, but also English, German and French and that makes it a very versatile cuisine. The Southern states are Alabama, Florida, Georgia, Kentucky, Louisiana, Mississippi, North Carolina, Oklahoma, South Carolina, Virginia, West Virginia and Texas. People living here seem to have a real culture and those born there will always consider themselves Southerners. They are easy to spot usually anyway due to their distinctive accent and dialects. The main ingredients for Southern cuisine seem to be squash, corn, tomatoes, flour, milk/dairy and eggs. Corn seems to be a staple of the region and it makes sense if we think that it was the Native Americans who introduce corn to the Europeans back in the days. European brought Beef in the United States and thus it began a real food adventure for the Southern Americans. The American Civil War had a huge impact on the Southern cooking and the foods people ate. Crops were destroyed during the war and food was hard to find. People had to go back to simple, common ingredients and they couldn't afford wasting a thing. Although the states began to recover slowly the following years, people kept eating simple and cheap, this kind of food being known as "soul food" at that time. Southern food still remains the same nowadays, despite the modern world. People enjoy their simple living and their food reflects it perfectly. However, simple ingredients doesn't mean lacking flavor or taste. Quite the opposite actually. Food is delicious, loaded with simple, yet interesting flavors and nothing is wasted. Follow me in this journey and you will see it for yourself. Put your apron on and get a bit of Southern food in your own kitchen. Southerners are proud of their culture and food and the truth is their recipes are delicious and easy to make, as well as versatile, perfect for the modern world we live in, despite all its technologies. Simple foods are known for being some of the best and this book will guide you through a bit of Southern food history, showing you how to make the most famous Southern foods, but also a few unusual combination. The book includes 10 delicious, fail proof recipes, using easy to find ingredients and unexpected flavors. Be bold and try some of these, it's a piece of history in one bowl and it's incredibly delicious.

Book Description :

In most of Ben’s experiences the humble Southern chefs share their long protected family recipes, but it’s not an adventure if everyone cooperates. Some of these institutions guard their recipes like members of the family. To the untrained eater, the secret ingredients it takes to create such an iconic dish would remain a bewitching mystery without the original formula. However, Ben’s journey and mission is to deliver the most amazing 100 Southern recipes. With his charm and ability in the kitchen, Ben acquired each recipe–one way or another. If he was unable to get the recipe directly from the source, Ben replicated it himself, only having tasted the dish. After deciphering the exact mix of ingredients, Ben’s recipe was put to the test when the recipe gatekeeper gave him the thumbs up. From iconic Southern kitchens all throughout the Delta—such as Mat & Naddies and Carlos and Rocky’s in New Orleans; Our Way Café in Decatur, Georgia; McMel’s, City Café, Dipsy Doodle, and Wendell Smith’s Restaurant in Tennessee; and Martha’s Menu in Mississippi—experience the real recipes, real people, and real stories as Ben journeys through the South exploring Southern Routes.

Book Description :

More than a cookbook, this is the story of how a little girl, born in the South of Yankee parents, fell in love with southern cooking at the age of five. And a bite of brown sugar pie was all it took. "I shamelessly wangled supper invitations from my playmates," Anderson admits. "But I was on a voyage of discovery, and back then iron-skillet corn bread seemed more exotic than my mom's Boston brown bread and yellow squash pudding more appealing than mashed parsnips." After college up north, Anderson worked in rural North Carolina as an assistant home demonstration agent, scarfing good country cooking seven days a week: crispy "battered" chicken, salt-rising bread, wild persimmon pudding, Jerusalem artichoke pickles, Japanese fruitcake. Later, as a New York City magazine editor, then a freelancer, Anderson covered the South, interviewing cooks and chefs, sampling local specialties, and scribbling notebooks full of recipes. Now, at long last, Anderson shares her lifelong exploration of the South's culinary heritage and not only introduces the characters she met en route but also those men and women who helped shape America's most distinctive regional cuisine—people like Thomas Jefferson, Mary Randolph, George Washington Carver, Eugenia Duke, and Colonel Harlan Sanders. Anderson gives us the backstories on such beloved Southern brands as Pepsi-Cola, Jack Daniel's, Krispy Kreme doughnuts, MoonPies, Maxwell House coffee, White Lily flour, and Tabasco sauce. She builds a time line of important southern food firsts—from Ponce de León's reconnaissance in the "Island of Florida" (1513) to the reactivation of George Washington's still at Mount Vernon (2007). For those who don't know a Chincoteague from a chinquapin, she adds a glossary of southern food terms and in a handy address book lists the best sources for stone-ground grits, country ham, sweet sorghum, boiled peanuts, and other hard-to-find southern foods. Recipes? There are two hundred classic and contemporary, plain and fancy, familiar and unfamiliar, many appearing here for the first time. Each recipe carries a headnote—to introduce the cook whence it came, occasionally to share snippets of lore or back-stairs gossip, and often to explain such colorful recipe names as Pine Bark Stew, Chicken Bog, and Surry County Sonker. Add them all up and what have you got? One lip-smackin' southern feast! A Love Affair with Southern Cooking is the winner of the 2008 James Beard Foundation Book Award, in the Americana category.
